Signature dining at Meridian — five courses, no theatre

Meridian is our chef-hatted dining room — five courses built around Tweed Valley produce, a wine list that prizes small growers, and service that knows when to leave you alone.

Tuesday to Saturday from 6 pm. Bookings essential on weekends; hotel guests get priority tables.

The Details

What dinner at Meridian is like

The menu changes with what's good at the farms — Chef Yuki Tanabe drives the Tweed Valley monthly and writes the menu around what she finds. Five courses, roughly two and a half hours, and a dining room that seats 60 rather than 160.

The wine pairing ($65) leans on small Australian growers — Orange riesling, Tasmanian pinot, a couple of natural wines that surprise people. A shorter three-course option runs on weeknights for $75 if you're not in a tasting-menu mood.

Dietary-friendlyVegetarian, vegan, gluten-free menus run parallel — mention it at booking.

How it works

How a Meridian evening runs

Two and a half hours, roughly — here's the rhythm.

01

Book ahead

Weekends fill by Wednesday. Hotel guests — ask at check-in.

02

A drink first

Aperitifs at the chef's bar while the first course is plated.

03

Five courses

Each course gets thirty seconds of explanation, then peace.

04

The cheese question

Optional, dangerous, worth it — the trolley does the selling.

05

Nightcap upstairs

Most tables end on the rooftop — the walk is two lifts.

The Meridian team

A kitchen that argues about tomatoes and a floor team that doesn't hover.

FAQ

Dining at Meridian — FAQ

No — a three-course option runs Tuesday to Thursday, and the bar menu covers lighter plates every night. Friday and Saturday are tasting-menu only.

Vegetarian, vegan, gluten-free and most allergies run as parallel menus, not sad substitutions — just flag it when you book.

Smart casual — nice jeans are fine, thongs and singlets aren't. It's a special-occasion room, not a stiff one.

The 14-seat room books through the enquiry form — birthdays, board dinners and small wedding parties are its usual crowd.
